Two Ingredient Spinach Tortilla

  • 1 cup fresh spinach
  • 2 eggs
  • ¼ tsp garlic powder
  • salt & pepper to taste
  • toppings such as cheese, cucumber slices, etc


  1. In a food processor, combine the spinach, eggs, garlic powder, and salt & pepper. Blend until smooth - I do about 15 seconds. 
  2. Grease a pan - I like to use olive oil spray. Over medium heat, pour a thin layer of the spinach egg mix. Let it sit for a few minutes, and then flip it and let it cook for another couple minutes. 
  3. Add fillings such as cheese, protein, veggies, etc. Can use this spinach tortilla as a wrap or burrito or quesadilla.
