Ingredients

  • 2 cups arugula
  • ½ cup GO VEGGIE shreds
  • handful of roasted broccoli
  • handful of roasted purple cauliflower
  • ½ avocado
  • handful of cherry tomatoes
  • handful of cashews
  • handful of corn
  • handful of chopped baby carrots
  • 1 tsp chia seeds

Preparation

  1. Fill a large bowl with arugula.
  2. Add purple cauliflower, carrots, broccoli, corn, cashews, tomatoes, and shredded cheese to bowl.
  3. Sprinkle chia seeds on avocado, and add it to bowl.
  4. Top with dressing of your choice.
