Vegan Veggie Salad
- 2 cups arugula
- ½ cup GO VEGGIE shreds
- handful of roasted broccoli
- handful of roasted purple cauliflower
- ½ avocado
- handful of cherry tomatoes
- handful of cashews
- handful of corn
- handful of chopped baby carrots
- 1 tsp chia seeds
- Fill a large bowl with arugula.
- Add purple cauliflower, carrots, broccoli, corn, cashews, tomatoes, and shredded cheese to bowl.
- Sprinkle chia seeds on avocado, and add it to bowl.
- Top with dressing of your choice.
