Crunchy Vegan Tacos

  • Beanfield chips (I used ranch & nacho flavors)
  • roasted Brussels sprouts
  • roasted broccoli
  • yellow pepper
  • red pepper
  • zucchini
  • yellow squash
  • tomatoes
  • spinach leaves
  • vegan chipotle mayo
  • sriracha
  • corn tortillas


  1. Roast the Brussels sprouts and broccoli.
  2. Lay out 3 corn tortillas and top with spinach leaves.
  3. Then add Brussels sprouts, broccoli, peppers, zucchini, & yellow squash to the tortillas.
  4. Top with pieces of chips, and drizzle with vegan chipotle mayo & sriracha.
