Paleo Cupcakes

  • 2 cups of Otto's Cassava Flour
  • ½ cup softened butter
  • ¾ cup coconut sugar
  • 2 eggs
  • 1 cup cashew milk
  • ½ tsp salt
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • few drops of water if needed
  • paleo vanilla & chocolate frosting from Simple Mills or make your own
  • rainbow sprinkles


  1. Preheat oven to 375 degrees, and line cupcake liners in a muffin pan
  2. Makes about 18 cupcakes
  3. Mix butter and sugar in a bowl and then mix in eggs
  4. Add flour, baking powder, and salt
  5. Add milk and then vanilla
  6. Stir well, and divide evenly between 18 cupcake liners
  7. Bake for 18-20 minutes
  8. Cool the cupcakes and then transfer to a wire rack
  9. Frost the cupcakes with vanilla & chocolate frosting and sprinkles.
