Cosmic Brownies

Ingredients

FOR THE BROWNIES:

  • ½ cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp pure vanilla extract
  • ½ cup GF all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ tsp baking powder
  • ¼ tsp salt

FOR THE CHOCOLATE FROSTING:

  • 4 cups powdered sugar
  • ¾ cup cocoa powder
  • 1 cup butter, softened
  • 2 tbsp milk
  • 3 tsp pure vanilla extract

FOR THE TOPPINGS:

  • rainbow sprinkles 

Preparation

  1. Preheat oven to 350 degrees. Line pan with non-stick aluminum foil or parchment paper. I used an 8x8 inch glass pan.
  2. In a large bowl, combine the butter, sugar, eggs, and pure vanilla extract.
  3. Add in the cocoa powder, flour, salt, and baking powder. Mix well.
  4. Pour batter into pan.
  5. Bake for about 25 minutes. When a toothpick comes out clean from the center, they're done.
  6. While the brownies cool, make the chocolate frosting. In a medium-sized bowl, combine the powdered sugar and cocoa powder. Add in butter, and then vanilla extract and milk. Mix together with a spatula and then use an egg beater or mixer machine if you have one. This makes the frosting smoother and creamy. If the batter is too thick, you can add a splash of milk at a time. You could cut the frosting recipe in half - I always like more frosting 😉
  7. Once the brownies have completely cooled, cut them into squares. Generously frost the brownies to make an even layer of chocolate frosting. 
  8. Add rainbow sprinkles all over the frosting.
