Avocado Egg Salad Sandwich

Ingredients

  • 1 avocado
  • 3 hard-boiled eggs
  • 2 tbsp plain or vanilla yogurt
  • 1 tbsp chopped green onion (or can use chives, parsley, dill)
  • 1 tsp lemon juice
  • salt & pepper to taste
  • 4 slices of GF bread

Preparation

  1. Peel & pit the avocado. Peel & chop the hard-boiled eggs. 
  2. In a medium bowl, mash the avocado. 
  3. Add the eggs, yogurt, green onion, and lemon juice to the bowl. Mix until creamy.
  4. Spread avocado egg salad on GF bread, and make into a sandwich.
