Veggie Stir Fry

Ingredients

  • 8 oz Mann's Fresh Vegetables stringless sugar snap peas
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • ½ yellow bell pepper, cut into long slices
  • ½ green bell pepper, cut into long slices
  • ½ red bell pepper, cut into long slices
  • ½ small yellow onion, chopped well
  • 1 tbsp avocado oil
  • 1 tbsp GF tamari sauce
  • handful of cashews
  • salt & pepper to taste

Preparation

  1. Chop veggies. 
  2. Over medium-high heat, pour avocado oil onto a large skillet.
  3. Add onions to skillet. Stir fry for 2 minutes.
  4. Then add snap peas, cauliflower, broccoli, and bell peppers. Stir fry for another 3 minutes.
  5. Add GF tamari sauce, and season with salt & pepper. Stir fry for another 3 minutes.
  6. Add cashews. Stir fry for another 3 minutes.
