Spinach Blondies

  • ½ cup spinach 
  • ½ cup GF oats
  • 2 medium bananas
  • 3 eggs
  • chopped chocolate or chocolate chips, optional


  1. Preheat oven to 350 degrees. Line baking dish with parchment paper - I use an 8x8 glass pan. 
  2. Add spinach and oats to blender or food processor, and blend well.
  3. In a medium-sized bowl, mash the bananas. Add the eggs, and mix together. Add in the spinach-oat powder. Mix together.
  4. Fold in the chocolate chips if you're adding them. 
  5. Pour mixture into pan. Bake for about 25 minutes.
