Avocado Parmesan Bites

  • 1 avocado
  • 1 egg
  • 1 cup parmesan, shredded or grated


  1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper.
  2. If the avocado is ripe, mash it up well with a fork. Or you can use a food processor or blender to mash it up.
  3. In a medium-sized bowl or food processor/blender, combine the mashed avocado, egg, and almost all of the parmesan. Mix together.
  4. Use a large spoon to make big dollops of the mixture, and place them on the parchment paper-lined baking sheet. Sprinkle the rest of the parmesan on top of the dollops. 
  5. Bake for about 10 minutes. You want the top to be slightly browned and can put a toothpick through one to make sure it comes out clean. Let it cool for a few minutes. Stay any leftovers in an airtight container in fridge for 3 days or freeze them for longer.
