Five Ingredient Hummus

Ingredients

  • ¼ cup lemon juice
  • ¼ cup tahini
  • 2 tbsp olive oil 
  • ½ tsp ground cumin
  • 1 can (15 oz) chickpeas, drained & rinsed
  • 1 to 3 tbsp water

Preparation

  1. In a food processor, combine the lemon juice and tahini. Process for a minute, scrape the sides with a spatula, and process it for 30 seconds more. 
  2. Add the olive oil and cumin. Process for 30 seconds, scrape the sides with a spatula, and process it for 30 seconds more. 
  3. Add half of the chickpeas. Process for 1 minute. Scrape the sides with a spatula, and add the other half of the chickpeas. Add 1-3 tbsp of water to thin it out a bit, and process for 1-2 more minutes or until it's the thickness you want. 
  4. Eat plain, or serve with carrots, celery, cucumbers, or crackers. Store in an airtight container in the fridge for up to 7 days. You can also make baked chickpea falafel to go with the hummus!
