Baked Citrus Salmon

Ingredients

  • 1 lb (16 oz) salmon (4 salmon fillets)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ tsp oregano
  • ¼ tsp garlic powder
  • ¼ tsp basil
  • salt & pepper to taste
  • 1 orange, sliced into rounds
  • ½ of a grapefruit or blood orange, sliced into rounds 

Preparation

  1. Preheat the oven to 400 degrees. Line a baking sheet with tin foil and then add parchment paper on top. Put salmon fillets on the baking sheet, skin-side down. 
  2. In a small bowl, combine olive oil, lemon juice, oregano, garlic powder, basil, and salt & pepper. Using a spoon/brush/spatula, put it all over the salmon. Top the salmon with sliced orange and grapefruit. 
  3. Bake the salmon in the oven for 10-12 minutes or until the salmon is flaky when pulled apart with a fork. I also use a meat thermometer to make sure that the internal temperature is at 110 to 140 degrees at the thickest part of the salmon. 
  4. Add cracked black pepper on top. Enjoy solo or add on top of a big salad with roasted veggies like broccoli and carrots. 
  5. Store any leftovers in an airtight container in the fridge for up to 3 days.
