Peanut Butter Cup Cookies

Ingredients

  • 1 cup coconut sugar (or can use regular sugar)
  • 2 eggs
  • 1 cup nut butter
  • 1 tsp Amoretti vanilla Madagascar bourbon extract
  • 20 miniature peanut butter cups

Preparation

  1. Preheat oven to 350 degrees.
  2. Combine sugar, eggs, nut butter, and vanilla Madagascar bourbon extract in a bowl. 
  3. Refrigerate the cookie dough for at least 10 minutes to make it a bit harder. 
  4. Roll the cookie dough into 20 cookie dough balls. 
  5. Bake for about 10 minutes or until browned a bit.
  6. One minute after taking the cookies out of the oven, add a peanut butter cup on top of each cookie by pressing the peanut butter cup gently into the cookie.
