Brownie Swirl Cookies

Ingredients

FOR THE COOKIE DOUGH:

  • 2 ¼ cup GF all-purpose flour
  • 1 cup butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pure vanilla extract
  • 2 eggs
  • 12 oz chocolate chips

FOR THE BROWNIES:

  • 2 eggs
  • ½ cup butter, softened
  • 1 cup granulated sugar
  • ⅓ cup unsweetened cocoa powder
  • ½ cup GF all-purpose flour
  • 1 tsp pure vanilla extract
  • ¼ tsp baking powder
  • ¼ tsp salt

Preparation

  1. Make the brownie batter. In a large bowl, combine the butter, sugar, eggs, and pure vanilla extract. Add in the cocoa powder, flour, salt, and baking powder. Mix together
  2. Make the cookie dough. Mix flour, baking soda, and salt in a small bowl. Beat butter, granulated sugar, brown sugar, & vanilla extract in large bowl until creamy. Add eggs, one at a time. Gradually add flour mixture, and beat until well-blended. Fold in chocolate chips.
  3. Lay parchment paper on large cutting board, and then put cookie dough on top of it. Put another piece of parchment paper on top of cookie dough and use a rolling pin (or a water bottle) to roll the cookie dough out so it's flattened. 
  4. Add a thin layer of brownie batter on top of the thin layer of cookie dough. 
  5. Carefully roll the brownie batter lined cookie dough to make a log of cookie dough. 
  6. Put cookie dough log in freezer for at least 15 minutes. Once the dough is chilled, it is easy to slice up. 
  7. Preheat oven to 350 degrees. 
  8. Using a sharp knife, cut slices off the cookie dough log. 
  9. Line a baking sheet with parchment paper, and place the cookie dough slices on the baking sheet.
  10. Bake for 8-10 minutes, or until the cookies are set.
