Rainbow Cake

Ingredients

FOR THE CAKE:

  • 1 cup butter, softened
  • 1.5 cups granulated sugar
  • 4 eggs
  • ¾ cup milk
  • 2 cups of GF all-purpose flour
  • ½ tsp salt
  • 2 tsp baking powder
  • 2 tsp pure vanilla extract

FOR THE CHOCOLATE FROSTING:

  • 4 cups powdered sugar
  • 1 cup butter, softened
  • ¾ cup cocoa powder
  • 2 tbsp milk
  • 3 tsp pure vanilla extract

Preparation

  1. Preheat oven to 350 degrees. Grease 2 cake pans or line them with parchment paper. I used an 8 inch circular pan but you can also use a 6 inch pan.
  2. Make the cake batter: In a large bowl, combine the butter and sugar. Add in the eggs. Add flour, baking powder, and salt. Add milk and pure vanilla extract. Mix well. 
  3. If making two layers, then divide cake batter into 2 bowls. If 5 layers then divide into 5 bowls, etc.
  4. Dye the cake batter with different food dye colors such as blue and green. 
  5. Pour contents of small bowls into their respective cake pans and bake for 15-20 minutes or until cake is cooked.
  6. In a medium-sized bowl, combine the powdered sugar and cocoa powder to make the chocolate frosting. Add in butter, and then vanilla extract and milk. Mix together with a spatula and then use an egg beater or mixer machine if you have one. This makes the frosting smoother and creamy. If you want more frosting, you can double the amounts for the frosting recipe.
  7. When the cakes cool, stack the cakes on top of each other with chocolate frosting in between and on the top layer and sides.
  8. Add sprinkles & other decorations as desired!
