Protein Blondies

Ingredients

  • 1.5 medium banana or 1 large banana 
  • ½ cup apple sauce
  • ¾ cup plant-based plain yogurt 
  • 1 tsp pure vanilla extract
  • 1 scoop of Birdman vanilla protein powder
  • ¼ cup GF all-purpose flour
  • 1 tsp baking powder
  • chocolate chips (I do about ½ cup)

Preparation

  1. Preheat oven to 350 degrees. Line pan with parchment paper. I use an 8x8 inch glass pan.
  2. In a large bowl, mash the banana up well. Add apple sauce, yogurt, and vanilla extract. Mix together. 
  3. Add vanilla protein powder, flour, and baking powder. Mix together. 
  4. Fold in chocolate chips. 
  5. Pour batter into pan. Sprinkle some more chocolate chips on top. 
  6. Bake for about 30-35 minutes. When a toothpick comes out clean from the center, they're done. Let them cool completely, and enjoy! Can store any leftovers in an airtight container for a few days.
