Greek Quinoa Salad

Ingredients

FOR THE SALAD:

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced and cut into quarters
  • 1 cup chickpeas
  • ½ cup kalamata olives
  • ⅓ cup feta cheese

FOR THE DRESSING:

  • ½ cup olive oil or avocado oil
  • ½ tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 tbsp lemon juice
  • ½ tsp dried oregano
  • salt & pepper to taste
  • ½ tbsp parsley, chopped

Preparation

  1. In a medium-sized bowl, place the cooked quinoa, halved cherry tomatoes, diced cucumber, chickpeas, kalamata olives, and feta cheese. 
  2. In a small bowl, combine the dressing ingredients. Whisk the dressing.
  3. Drizzle the dressing all over the Greek quinoa salad. Before serving, you can mix the salad up or leave the ingredients in separate sections.
