Paleo Blueberry Muffins

Ingredients

  • 2 cups or 240 grams of Otto's Cassava Flour
  • 2 eggs
  • ½ cup coconut sugar
  • 1 cup cashew milk
  • ¼ cup melted butter
  • ½ tsp salt
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • blueberries
  • ¼ cup water (optional)

Preparation

  1. Preheat oven to 425 degrees
  2. Line a 12-cup muffin tin
  3. Will make about 20 medium-sized muffins
  4. In a large bowl, mix together the flour, coconut sugar, salt, & baking powder
  5. Add the eggs, cashew milk, & melted butter, and stir well
  6. Add water if needed to mix better
  7. Add blueberries to batter
  8. Fill the muffin tin so they are about ¾ full
  9. Bake the muffins for about 15 minutes
