Ingredients

  • 2 cups Organic Gemini TigerNut Flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • ½ cup canola oil
  • ⅔ cup honey
  • ⅔ cup milk
  • 1 tbsp vanilla extract
  • 1 cup fresh blueberries

Preparation

  1. Preheat the oven to 375 degrees
  2. Line a 12-cup muffin tin
  3. In a large bowl, mix together the flour, baking powder, baking soda, salt, cinnamon
  4. Add honey, milk, and vanilla to the mix, and mix well
  5. Carefully add blueberries to the batter
  6. Pour an even amount of batter into each of the 12 muffin tins
  7. Bake the muffins for 22 minutes
