Blueberry Banana Muffin Sandwich

  • 1 cup of Amoretti almond flour
  • 2 eggs
  • 1 tbsp honey
  • ¼ tsp baking soda
  • ½ tsp apple cider vinegar
  • ½ ripe banana
  • ¾ cup fresh blueberries
  • vanilla frosting


  1. Preheat the oven to 350 degrees
  2. Line a 12-cup muffin tin
  3. In a large bowl, mix together the flour, eggs, honey, baking soda, apple cider vinegar
  4. Carefully add banana & blueberries to the batter
  5. Pour an even amount of batter into each of the 12 muffin tins, and bake the muffins for 16 minutes
  6. Let the muffins cool
  7. Take two of the muffins and spread vanilla frosting generously to sandwich the muffins
  8. Add blueberries around the rim
