Apple Cinnamon Yogurt Muffins

Ingredients

  • 2 cups GF flour
  • 6 oz Dream yogurt
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 eggs or egg substitutes
  • 1 cup milk or milk alternative
  • ¾ cup sugar
  • 6 tbsp avocado oil
  • 1 tsp vanilla
  • 1 apple cut up into small squares
  • sprinkled cinnamon

Preparation

  1. Preheat oven to 350 degrees, and line a 12-cup muffin tin.
  2. Mix together all ingredients, leaving some of the apple and cinnamon to sprinkle on top of the batter once in muffin tins.
  3. Spoon batter into 12 muffin cups, top with the remaining apples & cinnamon, and bake for 20 minutes.
